I use the Quick Hack Cripple Movement then walk behind them and grab them. From there use Non-lethal Takedown option and done.

None of the Cyberpsychos are missable. You can still find all of them after the story in free roam. Your story decisions have no impact on them. You can keep track of which ones you’ve already completed via the journal (quest log).
