Canon for KOTOR 1 would be LS male, canon for KOTOR 2 would be LS female. However, having played both games with both genders I would argue that both games are designed around the player being a male, or at least are a little better playing as a male. Handmaiden is a better character than the Disciple imo.

SWTOR is a little rough around the edges, and is sometimes too ambitious for it's own good regarding story, especially considering the nature of an MMO where everyone's main character is completely different. Canonizing that would take away a bit from the uniqueness of everyone's story.
I am of the opinion that Revan was neither good nor evil just calculating and neutral if anything however as far as I know there is no option to truly play a neutral character in KotOR I, but there is NO way the dark side ending is correct for the first game because if it was everyone would know where Revan was because he would have conquered the republic, I can see the light side ending being ...
